What am I suggesting? Picture this familiar scenario;
You’ve connected with a table of four guests and have engaged with them regarding DRINKS - let that word spark you into flicking your eyes up (and down, depending on where you’re standing) your section. But do it casually while remaining completely in the moment with your table of four guests. Notice instantly and commit to memory who’s in need of wine and water. As you gracefully leave the table you’ve been connecting to you, rather than heading straight for the POS, you take a few steps back and grab the water jug and as you walk along your section topping guests glasses you may suggest you’ll be back to chat wine, as you complete that task you place your drink order at the POS then hand the bearing empty jug to your comrade behind the bar to refil.
This is muscular ballet. You don’t look frazzled due to you ALWAYS having your next move in the chamber. This takes honing - and is well worth it. Train your younger/inexperienced staff this way. When you’re going to the wine fridge that’s past the bar be sure to grab some empty martini glasses from guests’ tables as you pass them... keep your hands full.
